FIC WORKSHOP

Award-winning pastry chef, Alessandro Laudadio of the distinguished Federazione Italiana Cuochi (FIC), part of the Worldchefs Organization, will be hosting a workshop to present and deconstruct the recipes that he developed especially for ASN´s end of year event. Chicory is used as a central ingredient in his twist on the Napoltena classic, Chicory Maritozzo with Anchovy Powder and in his take on the Spanish staple, Raw and Cooked Chicory Gazpacho.

ALESSANDRO LAUDADIO

Professional Pastry Chef and Culinary Consultant with vast experience in both starred and non-starred restaurants throughout Italy and Europe. He is a member of the Federazione Italiana Cuochi (Federation of Italian Chefs) for whom he currently holds the position of Deputy National Secretary. He has acted as pastry chef on multiple occasions for the many FIC events held over the years. He has also taken the role of trainer for the Federcuochi in the field of restaurant pastry. He has a deep knowledge of the restaurant world in its entirety and of raw materials which he finds fundamental for the success of creation and creativity.

Founded in 1968, the Federation of Italian Chefs (FIC) is an officially recognised body of over 110 Italian and foreign associations representing and supporting the development and promotion of professional, dedicated cooks. With over 15,000 annual members FIC is represented in the main culinary salons of the world and plays a leading role in esteemed international culinary competitions including Lyon´s Bocuse D’Or and the World Championships of Luxembourg.
