WE’RE SMART WORKSHOP
Vegetable enthusiast and We’re Smart founder, Frank Fol, and the current number 1 vegetarian chef in the world, Chef René Mathieu, will each be hosting a workshop to present and deconstruct their bespoke chicory-based recipes.
The workshops will be molded around the main themes of our ASN event and will explain both the science and the artistry behind cooking with our CHIC Consortium focal ingredient, chicory.
FRANK FOL
Consultant on healthy, equilibrated and vegetal food and former owner of the first vegetables restaurant Sire Pynnock, Vegetables chef Frank Fol has been passionate about vegetables and earth-grown matter for more than thirty years. His cooking has always been geared towards the use of vegetables and fruit and he is an ardent defender of “vegetables first, followed by the other products”. Whilst promoting his slogan “Think Vegetables! Think Fruit!”, he travels around the world sharing his approach to the kitchen of today alongside his peers. Frank Fol is the founder of We’re Smart® World, and We’re Smart® Green Guide which went international in 2017.
RENÉ MATHIEU
A former star chef on the Belgian culinary theatre, today he is an international consultant on healthy, equilibrated and vegetal (as often as possible but not systematically) food. He consults, coaches and teaches workshops all over the world. Former chef/owner of Michelin star restaurant Sire Pynnock has, for more than thirty years, been really passionate about vegetables and all produce growing on our earth and his cooking was very much geared towards the use of vegetables and fruit.
